Torrefazione Varanini is defined by a unique roasting method whose story begins in 1970 in Milan, in a small workshop on Via Varanini. Its founder, Stefano Zappa—a distinguished master roaster—initially produced coffee in a 40 m² space using a 30-kilogram roaster. Every day, the roasted beans were hand-packed and delivered directly to customers by the founder himself. This was the first step that laid the foundation for the brand’s future success and recognition, both in Italy and internationally.
In 1975, the company took an important step forward by opening a new production site in Limbiate (Milan–Monza area), where it gradually introduced more efficient equipment and production processes. Growing customer demand required scaling, and Varanini chose exactly that path.
In 2007, the company reached another turning point: a completely new, modern, technology-equipped factory was built in the Milan/Monza area, significantly expanding both production capacity and warehouse capabilities. This infrastructure positioned Varanini as one of the most advanced and technologically developed companies in its field.
Today, Torrefazione Varanini operates in a 1,500 m² facility and processes more than 10 tons of coffee per day. The plant is equipped with two roasting lines and a fully automated packaging system managed by three independent control units. As a result, the combination of decades of experience and modern technology ensures consistently high quality and stable roasting results.
Varanini blends are known for their distinctive aroma and taste. Beans from different origins (Brazil, Colombia, Guatemala, India, Santo Domingo, and others) are roasted individually according to their origin and only then expertly blended to create products that meet diverse customer preferences while consistently maintaining premium quality. Special attention is also given to packaging: an elegant, simple, and functional design protects the aroma and reinforces the brand’s identity.
In Italy and beyond, espresso has long been an everyday ritual. Varanini is among the companies that established a strong commitment to quality from the very beginning—an approach that earned the brand a reputation as “the professionals’ choice.” In 1998, the company became one of the first Italian roasters to obtain ISO 9001 certification. In 2015, it successfully completed the IFS Food certification process, further confirming its long-term dedication to high quality standards.
The company also holds kosher certification.
Varanini carefully selects only hand-picked and hand-sorted green coffee, and controls the roasting process with absolute precision in high-tech equipment—over approximately 20 minutes. Each type of bean is roasted separately, then tasted and evaluated, and only the best components are included in the final blends. Automated packaging ensures hygiene and the flawless preservation of aroma.
